IMPORTANT:

  • The lid must accompany the mold throughout the entire baking process, but it should only rest on top — never be tightly closed.

  • Always place the molds on the lowest rack of the oven.

  • The oven must be set to “BAKE” mode (do not use BROIL, GRILL, or CONVECTION).

  • Use room temperature water in the bain-marie — never preheated or hot water.

  • Do not cover molds with aluminum foil.

  • Do not let the bain-marie water evaporate or dry out during baking.
